Tomato, basil and cheese omelette sandwich




This sandwich is very easy to put together. The omelette in it is has a few of my favourite ingredients. I already had a couple of borderline overripe tomatoes, some old basil leaves and of course, cheese cubes. Makes for a delicious omelette and an even better sandwich filling. Great for Sunday breakfasts. Use a sandwich grill to get that nice brown crisp side of the bread or just toast the sandwich on a nonstick pan. I used a waffle maker as you can see.


Eggs – 4

Tomato – 2 ripe ones chopped

Cheese – 1 cube grated (if you have nice hard cheese then 1/4 cup)

Basil leaves – handful


Heat a spoon of oil in a nonstick pan. Add tomatoes and cook them down for 5 mins or so.

Whisk the eggs well before adding them to the tomatoes. Add the basil too.

Top it with grated cheese, cover it with a lid and cook on medium heat till the top looks set.

Flip it over if you like it done really well. I prefer eggs slightly soft if not runny.

I put a big chunk of the omelette between two slices of bread and popped it into a waffle maker. You could use a regular grill or even toast both sides on a pan.
