Be it Koshy’s in Bangalore or Kyani & Co. in Bombay, the masala cheese omelette that these old school folks make is simply amazing. It’s just eggs, chillies and cheese. But the comfort it gives is what makes it so good. Add the nostalgia factor and you have a winner. The cheese slice sitting right in the centre of the omelette with little specks of green chilly scattered around..sigh. I wanted to replicate it, but instead turned it into masala cheese bhurji. Works brilliantly and made effortlessly.

Ingredients:
Eggs – 4 (2 per person)
Green chillies – 1 finely chopped
Onion – 1 small, chopped
Ginger – 1/2 inch piece finely chopped
Garlic – 2 cloves finely chopped
Pepper powder – 1/2 tsp
Cheese slice – 2 (1 per person)
Salt – to taste
Oil – to cook
Method:
Heat the pan and saute the onions till translucent.
Add the ginger, garlic and chillies saute for another 2 minutes.
Whisk the eggs (2 at a time) and pour over the onion mixture and add salt.
Now scramble it and let it set.
Once it looks set, place a cheese slice right in the centre. Cover again till the cheese melts.
Take it off the heat.
Serve with pan toasted bread and chaiĀ for breakfast.
