Pancakes have to be the easiest, most delicious and comforting breakfast treats. These have bananas in them and topped with more bananas, syrup and a hot chocolate sauce. The sauce is simply hot chocolate with extra cocoa to give it more thickness and make it more chocolatey. What I did with this recipe is add an extra egg white. It made the pancakes more fluffy and gave it the lovely tan it needs. There’s nothing else I can say about these except, dig in!

Ingredients:
Flour – 1 and 1/4 cup
Milk – 1 cup
Banana – 1 and 1/2 mashed
Baking powder – 1 tsp
Eggs – 1 whole separated + 1 extra white
Vanilla – 1 tsp
Sugar – 2 tbsp
Salt – a pinch
Cinnamon powder – 1 tsp
Hot chocolate sauce:
Drinking chocolate – 3 tbsp
Honey – 1 tbsp
Milk or cream – 1 cup
Cocoa – 1 tbsp
Method:
Mix the flour, baking powder, salt, 1 tsp cinnamon and sugar.
In another bowl mix the milk, mashed banana, egg yolk and vanilla. Mix.
Add the dry ingredients to the wet ones and mix.
Whisk the egg whites till you have soft peaks.
Slowly fold the egg whites into the batter.
Heat a nonstick pan and drop a ladle of batter on it.
Let the pancake cook on one side for about 40 seconds before you flip it and cook the other side for another 40 seconds.
Finish the rest of the batter.
Heat the cream/milk and add the rest of the ingredients.
Let it bubble and take it off the heat. Keep aside.
Stack the pancakes, top with fresh banana and pour the hot chocolate sauce over it. If you’d like you can also top it with maple syrup too.
