Thank heavens for bottled sauces. Sometimes all you have the energy and time for is to whisk in a sauce with meat and get going. For me, weekends are when I cook elaborate meals. I don’t have that kind of time during weekdays. So, it’s always quick cooking and quicker packing for lunch. Nothing easier and quicker than a bowl of minced chicken with some soba noodles to go with. A few days ago I got some chilli garlic sauce and spicy black bean sauce along with some minced chicken and it was a great time to open these jars.
I simply marinated the chicken mince in some black bean and chilli garlic sauce (you really can’t go wrong with the two). Next morning, I cooked the chicken down with some more of the paste and basil leaves. At the last minute I threw in some fresh snow peas for crunch. Can’t tell you how delicious and easy this was.

Ingredients:
Chicken mince – 300 gm
Black bean sauce – 2 tsp + 2 tsp
Chilli garlic sauce – 2 tsp + 2 tsp
Ginger garlic paste – 2 tsp
Soy sauce – 2 tsp
Honey – 2 tsp
Basil leaves – Handful chopped
Fresh snow peas – Handful
Sesame or any vegetable oil – 2 tsp
Method:
Marinate the chicken mince in 2 tsp black bean sauce and chilli garlic sauce overnight.
Heat the sesame oil in a nonstick pan.
Add the chicken and let it begin to cook.
Quickly whisk together the soy, 2 tsp black bean sauce, chilli garlic sauces and honey.
Pour this into the chicken and add the basil leaves, and cover with a lid.
Let it cook for 5-6 mins.
Take the lid off and check for salt. Add more sauce or salt if needed.
Throw in the fresh snow peas and put the lid back on. Turn the flame off.
Serve with rice or soba noodles like I did.
