Mango Chia Breakfast Parfait

I’m reaaalllyyy not into hipster breakfasts like this but sometimes you want something cold, sweet and light. Particularly during summers that make your face melt. I just have chia seeds with me thanks to an old friend who bought it, never used it and left it at my place. I tried chia pudding once and didn’t quite come around to liking it. I wasn’t a fan of the texture for the most part. But yesterday I thought I’d do a breakfast parfait, because that’s one of my favourite summer breakfasts. And I thought some chia might be good in there. It looks pretty, doesn’t it?

Mango Chia Breakfast Parfait

You’ve got to soak the chia seeds in water the previous night though. Although it takes around 15-20 mins to soak the water and turn plump, I didn’t want to spend that time early morning. Soaking it the night before means 15-20 mins extra sleep the next morning. I also added some strawberries and nuts for extra flavour and texture.

Ingredients:

Mango – pulp of 1 small one (save a few small pieces for garnish)

Chia seeds – 1 tsp (soak in 1/4 cup water overnight or for 30 mins)

Greek or regular yoghurt – 2 tbsp

Honey or maple syrup – 1 tsp

Strawberry/apple/pear/banana – handful of pieces

Nuts – 2 tsp crushed

Method:

Puree the mango pulp and keep aside.

In a jar, pour the pulp first then top it with the soaked chia seeds.

Swirl the honey in the yoghurt and pour on the chia seeds (you could first do the yoghurt and then the chia seeds too).

Now add the other fruits and mango pieces.

Top with nuts.

Serve chilled!

PS: I packed this in a jar and took it to office for breakfast.
