I have no reason to make eggless anything. But this one time last week I saw one of those Buzzfeed Tasty videos of an eggless brownie and wanted to try it. I did change the quantities and kinds of sugar. As I always say, an eggless variation of a classic will come nowhere close to the real deal. But my colleagues seemed to have loved it. I for one thought it was good. Maybe with a scoop of ice cream it’d taste even better!

Actually, it’s the texture of these brownies that didn’t cut it for me. They’re more like fudge than brownies. Still works though if you’re looking for eggless options.

Ingredients:

Banana – 2 ripe

Flour – 3/4 cup

Brown sugar – 1/2 cup

Granulated white sugar – 1/4 cup

Butter – 1/2 cup divided

Peanut butter – 1/2 cup

Cocoa – 1/4 cup

Vanilla – 1 tsp

Method:

Preheat your oven at 180 degrees C while you make the batter.

Mash the bananas in a large bowl.

Add the sugars and mix.

Melt half the amount of butter and leave the other half at room temperature. Add both to the banana mix along with the vanilla.

Whisk till smooth.

Now tip the flour and cocoa in and fold it into the batter till well incorporated.

Pour this into a parchment paper lined baking tin.

Scoop approx. 1 tsp of peanut butter and drop it on the top of the batter. Repeat till you have gone through 1/2 cup of it. Now swirl it around with a butter knife.

Pop this into your oven and bake for around 30-35 mins.
