Roasted and Spiced Potato Wedges

We all love a good nibble of French fries or plump potato wedges every once in a while. But the fast food kinds are such a put off with all that grease. Yes, such food is meant for comfort. The soggy mess that they turn into when you order in though makes you want to whip up a batch yourself. Well, with an oven and a nonstick pan, you can. While I’d love nothing more than to simply let the potatoes roast away in the oven till golden brown with a crisp skin, I realize I don’t have one of those big beautiful ovens. Mine is a small OTG and I get by with it.

Because of the kind of oven I have, I did have to let them brown on a nonstick pan for just a minute or two. But it was totally worth it. I got my crunchy bits and good colour on them. Of course, I had to use a lot of zaatar to make them delicious. But you can skip that and use a mixture of herbs you have handy.

Potatoes – 3 medium cut into wedges

Oil – 1 tbsp

Chilli powder – 1 tsp (or more if you want it spicier)

Zaatar – 2 tsp

Thyme – 1 tsp

Salt – to taste

Pepper – a pinch


Preheat oven at 200 degrees C for 10 mins.

Toss the potato wedges in the oil, chilli powder, zaatar, pepper and thyme.

Sprinkle salt over the potatoes.

Line a baking tray with parchment paper and arrange the wedges on it.

Put it in the oven and let it cook at 200 degrees C for 35 mins or till the wedges are soft.

If there’s a good colour on them and have crisped up a bit you’re golden. Else, put a nonstick pan up to heat and grease with a tsp of oil. Place the wedges on the pan and let them get brown on both sides.

Sprinkle more zaatar or chilli powder and serve hot.
