Crushed Cucumber Salad with a Soy Miso Dressing
It’s what you think it is. Cucumber, crushed and served with a dressing. As simple as that. I recently saw someone on I follow and admire on Twitter post her meal which had this cucumber crushed and served on the side. Given how hot it still is in this part of the country, a cucumber salad seemed ideal. Well, I took it to my friend’s place and it was a hit. You can make this is in 5-8 minutes and is a great addition to your dinner.
This one works great with any kind of strong dressing. I did a soy miso dressing with some chilli and ginger. Super easy and even more delicious. For a more Indian take on things, simply mix ginger, chilli, lemon juice, chilli powder and aamchoor (dry mango powder) together for the dressing. It’ll be a refreshing side to go with spicy curries. A break from raita, isn’t it?
Time:
5-8 minutes
Ingredients:
English cucumber – 2 small ones
Coriander leaves – for garnish
Dressing:
Soy sauce – 3 tsp
Miso – 1 tsp
Honey – 1 tsp
Sesame oil – 1 tsp
Ginger – 1/2 inch piece, crushed and finely chopped
Red chilli – 1, finely sliced
Lemon juice or vinegar – 2 tsp
Method:
Cut the cucumber lengthwise and into 1-inch pieces. Using the flat side of your knife, crush the cucumber pieces lightly.
Place on a plate while you mix the dressing.
Mix all the ingredients for the dressing. Check for taste and adjust accordingly.
Pour all over the cucumber.
Garnish with coriander leaves.
