Spaghetti with Ricotta, Garlic and Olive Oil
I recently did a post on homemade ricotta and things you could do with it. One dish I wanted to make a separate post on was this spaghetti with ricotta, garlic and olive oil. It’s really simple, most of the ingredients are listed in the title itself, and is super delicious. Not to forget, it cooks in a few minutes. The flavours you’d be hit with are predominantly garlic and olive oil. The ricotta adds a nice creaminess in bursts. Lots of freshly cracked pepper for some heat and some parsley for, well, colour. I don’t see what else it could do.
You could add bacon or even grilled chicken to it to make things meaty. But I found it to be delicious as it is. Hard cheese are quite expensive for me to stock them so homemade ricotta comes to rescue for such quick meals. You could add more ricotta and mix it in the pan itself with the spaghetti to get a creamier dish but I had just about 1/4 cup of it. Go on and make some soon!
Spaghetti – 1 portion, cooked as per instructions on the package
Olive oil – 2 tbsp
Ricotta – 1/4 cup
Garlic – 4 cloves thinly sliced
Peppercorns – 1 tsp worth freshly cracked/crushed
Lemon juice – from half a lemon
Salt to taste
Heat olive oil and saute the garlic till it’s golden brown and fragrant.
Add the spaghetti and salt. Toss and mix till everything is well combined.
Turn off the heat, crumble the ricotta and mix well.
Sprinkle the peppercorn and parsley and serve.
