I’ve always watched these cooking shows on TV where they poach stone fruits and pears till they’re soft and serve with ice cream or creme anglaise. It looked so delicate yet indulgent. I tried my hand in making one of these dishes and it was beautiful. I didn’t look up any recipe online since it’s pretty simple to make. The poaching liquid in particular was delicious. I poached peaches and plums in sugar syrup with star anise, cloves, cinnamon and ginger. After the poaching bit, I reduced the liquid and ended up with a sweet sticky blushing syrup with hints of the spices.
Peaches – 2
Plums – 2
Sugar – 1.5 cups
Water – 2 cups
Star anise – 2
Cloves – 5-6
Cinnamon – A few broken sticks
Ginger – 1/2 inch piece grated
Greek yogurt or hung curd – 1/2 cup
Vanilla – 1/2 tsp
Honey – 1 tbsp
Half the fruits and take the stone out.
Bring the water and sugar to a boil with the spices and ginger.
Place the fruits skin side up and let it cook for 10 mins on med heat or till they’re soft yet hold their shape. My plums went a little mushy though.
After they’re cooked, take them off the poaching liquid and keep them aside.
Reduce the poaching liquid on high heat till it gets to a syrup like consistency. This will take around 15 mins.
Run it through a sieve and keep aside.
Mix the yogurt, honey and vanilla till nice and fluffy.
Serve the fruit with the syrup and the yogurt.
Save the syrup to top ice creams and yogurt, and even cake.
